Recipe: Lime Cilantro Vinaigrette Dressing & Marinade

This homemade lime vinaigrette dressing is made with only a few simple ingredients and can be used to dress green salads, pasta salads, marinate chicken or fish, or add flavor to rice.
Ingredients:
- 2 tbsp lime juice, fresh or bottled
- 1 tbsp fresh cilantro, finely chopped
- 1 tsp garlic, minced
- 1 tbsp apple cider vinegar, raw with the mother
- 2 tbsp olive oil
- 1 tsp Dijon mustard
- ¼ tsp salt (optional)
- ¼ tsp sugar (optional)
Instructions:
Combine all ingredients into a medium bowl. Whisk together until well combined.
- Salad dressing: pour over salad greens such as arugula and toss to combine.
- Marinade: pour over chicken, fish, or other lean protein in glass or other non-reactive container (avoid aluminum or foil). Cover and store in the refrigerator for at least 1-2 hours.
Notes:
- Makes 2 servings
- Store refrigerated in air-tight container
- Use within 4 days
